Vulcan CEO Jody Allen is challenging you to create a nutritious dish using five criteria, and then share
that dish with your coworkers. The dish should be nutritionally complete, and made of ingredients that
are local, minimally processed and sustainable. Above all, the dish should be tasty!
Jody's five criteria:
- Nutritional: This dish should be nutritionally complete. That means it must incorporate at least 3
of the 5 food groups in the Food Pyramid.
For example: Kale (vegetables), kidney beans (meat/beans) and quinoa (grains).
- Local: One of the main ingredients in the dish needs to be a locally grown. Visit a farmer's
market, co-op, or shop that sells local goods to get what you need.
For example: Test out milk from a local dairy or use fresh carrots from your own
backyard.
- Minimally processed: One of the main ingredients in the dish needs to be minimally processed.
For example: Brown or wild rice versus white rice.
- Responsibility: Incorporate at least one sustainable ingredient into your dish.
For example: Use clams farmed in environmentally friendly ways.
- Taste: This dish may be healthy, but it has to taste good too!
